Chicken Salad with Moringa & Avocado Mayo

 

Moringa chicken saladLooking for a delicious, quick & easy, yet extremely healthy dinner recipe? We've got one!

One of the wonderful plants grown in the Key West Community Garden is Moringa(Moringa Oleifera, aka "The Miracle Tree") has some pretty amazing nutritional qualities. Moringa has 7 times the vitamin C of oranges, 4 times the vitamin A of carrots, 4 times the calcium of milk, 3 times the potassium of bananas, and twice the protein of yogurt (1.)

Moringa's only down-side is that it can grow into a large tree and since it's a pretty fast growing plant that's hard to stop once it gets going (even a Moringa tree stump will produce new shoots), you'll want to grow it in a large pot or self-watering container to contain the roots and overall growth of the tree, unless of course you have the space for a large tree. But, Moringa makes an ideal container plant for patios and balcony gardens where the plant can be contained to a shrub with regular harvesting of the branches.

Though the roots, bark, seeds, flowers, and leaves ot the Moringa Tree are all edible, the seeds should not be eaten daily and only eaten very sparingly after thorough research. It is the Moringa leaves that are the powerhouse of nutrition and safe for daily consumption.

In our recipe we made a simple Chicken Salad Sandwich using the following ingredients....

 

  1. Fresh Valley Canned Organic Chicken Breast
  2. Avocado Mayo
  3. Moringa leaves, finely minced
  4. Organic Carrot, finely minced
  5. Organic Celery, finely minced
  6. White Onion, finely minced
  7. Garlic, finely minced
  8. Old Bay Seasoning
  9. Black Pepper
  10. Hot Habanero Sauce, 1-2 drops
  11. Potato rolls

We'll leave the amounts up to you. You can't go wrong because when you put good stuff in, you get good stuff out! For best flavor be sure to chill the salad for 20 minutes before making salad rolls and serving. Serve with sliced pineapple to add a tropical touch. Enjoy!
